New Cascadia Traditional Bakery is dedicated gluten-free bakery, offering breads, pastries, and special-occasion cakes. They’re well-known for their cupcakes, especially after appearing on Cupcake Wars.

Popular items sell out early, so if you have your heart set on something, go early in the day or make a special order.

Pizzas, sandwiches, and salads are served for lunch from 11am-2pm. Of course, it’s all gluten-free. A lot of it is vegetarian-friendly, too: A winter menu featured a beet sandwich, a cashew-based veggie burger, and soy-free tempeh to add to salads. 

On Sundays, check out brunch. Gluten-free bagels? Apparently it’s possible! Gluten-free biscuits with vegetarian mushroom gravy? You betcha.

You can find loaves of New Cascadia bread at New Seasons, Whole Foods, Market of Choice, and many restaurants around town.
